“Montefalco grapes produce strong, tannic wines; only in proper aging and long glass refinement do we find the character of the Umbrians.”
Sangiovese, merlot, Cabernet, native grape variety of Montefalco
Vinification and Maturation
The fermentation undergoes at a controlled temperature, preceded by cryomaceration prefermentation. After racking, the wine is left to decant in steel vats, where the malolactic fermentation takes place before facing the aging in wood for 12 months, followed by a long refinement in bottle.
The color is ruby red with violet reflections. The nose is complex: blackberry, sour cherry, cherry, black pepper, vanilla. The Sagrantino and the aging in wood are clearly identifiable. Balanced palate, sapidity, freshness, integrated and non-aggressive tannins. Soft, long and with a pleasantly sweet and round finish.
Game, aged cheese.
